Pizza Pasta

I made this recipe on Sunday night and it was awesome. I got the recipe out of a magazine that also gives the nutritional info, it really isn't bad for you. I think the most important step, health-wise, is to use whole wheat or multi-grain pasta. Also, this is seriously the easiest dish to make, but once finished it looked like it took a lot more work. 

Pizza Pasta  

Serves 6 

- 4 cups uncooked multigrain bow tie pasta- 
-2 cans (14.5 oz. each) fire roasted diced tomatoes, undrained- 
- 3/4 cup water- 
- 12 slices turkey pepperoni, quartered- 
-1 Tbsp. prepared pesto- 
- 1/4 tsp. pepper- 
- 3/4 cup shredded italian cheese blend-  

Step 1: In a bowl, combine the uncooked pasta, tomatoes, water, pepperoni, pesto and pepper. 
Step 2: Transfer mixture into a baking dish coated with cooking spray 
Step 3: Cover and bake at 350 for 45 minutes. 
Step 4: Stir pasta and bake for 15 more minutes or until pasta is tender. 
Step 5: Top with cheese, then bake, uncovered for 4-6 minutes or until cheese is melted. 

That's it! Sorry, I forgot to take a picture of how it turns out but I'm sure you can imaging...I mean, it's pasta..with tomatoes, cheese and pepperoni...

1 and 1/4 cup serving equals: 

318 Calories 
7g fat 
15 mg cholesterol 
584 mg sodium 
47 g carbohydrate 
5 g fiber 
16 g protein

I'm Done!

Well...that went by fast. Somehow, I finished my internship last Friday! It was a great experience and I learned so much about public relations. I just can't believe how fast the summer has gone. I feel so boring because my summer went something like this: 

-sleep- 
-work out- 
-eat- 
-go to work-
-repeat- 

But oh well, I guess this is a preview of life post-college? I do like a good routine I guess ;) 

Now, I have a week of "summer" also known as, oh s*** I didn't do anything to get ready for moving back to College Station!!!!!
